I asked my swiss friend for her apricot pie recipe and she will be passing it along to me soon. I was wrong about the quark. The custard is made with eggs, whipping cream and vanilla. She will give me exact measurements then I will pass them along. The quark she uses to make her apple pie. That is quark cheese, egg, lemon zest and enough lemon juice to compliment the tartness of the quark. She then pours over sliced apples layed out fan style in a round pan on a crumbly crust.
